Chicken salad

CHICKEN WALDORF SALAD

MAKES 1 SERVING

2 tbsp nonfat Greek yogurt
2 tbsp low-fat mayonnaise
1 tbsp white-wine vinegar
1/21/2 tsp kosher salt
1/41/4 tsp black pepper
1 cup shredded baked or grilled chicken
1 celery stalk, sliced
1 green apple, cut into 1/21/2-inch pieces
2 tbsp chopped walnuts
2 cups spinach

1. In a medium bowl, whisk together yogurt, mayo, vinegar, salt, and pepper.
2. Add chicken, celery, apple, and walnuts and toss to combine.
Serve over spinach.
